 ~Takenoko-zushi~ (Sushi with Bamboo Shoots)

In spring fresh bamboo shoots@appear on the marketDPeople enjoy its various cooking this time of the year.

Ingredients used in the following recipe make thiscuisine more colorful and tasty.

Why donft you take this to Hanami (cherry-blossom viewing) for lunch, as well?

Ingredients (4 servings)

  1. 3 cups of rice, 3 and 1/4 cups of water

  2. For Sushi dressing...4 and 1/2 tbsp. of vinegar, 2 tbsp. of sugar, 1/2 tsp. of salt(Sushi-dressing is sold at supermarkets.)

  3. 250g of boiled bamboo shoots–, 50g of carrot, 4 Hoshi-shiitake (dried Chinese mushroom), 1 Abura-age (thin fried Tofu), 1 and 1/2 tsp. of Dashi-no-moto (powdered Japanese stock), 150cc of water, each of 2 tbsp. of sugar, Sake and soy sauce, 1/2 tsp. of salt

  4. For thin –omelet...3 eggs, 1 tbsp. of sugar, 1/3 tsp. of salt

  5. 15 Ki-no-me or Sansho leaves (a kind of herb)

Directions

  1. Wash the rice carefully, drain for 30 minutes and cook with the water.

  2. Combine the seasonings of B and heat to make Sushi dressing.

    Place the cooked rice in a large bowl(A wooden bowl is better.)and  spread.

    Pour the Sushi dressing over it and mix quickly but gently.

  3. Soak the Shiitake in water for 20 minutes to soften and cut in thin slices. Cut the carrot into

3 cm strips. Slice the top part of Takenoko lengthways and chop the rest.

Pour boiling water over the Abura-age and cut into 3cm thin strips.

  1. Put the ingredients of No.3 into a pan with all the seasonings of C and water.

    Simmer until the liquid is almost gone.

  2. Add No.4 except sliced Takenoko to Sushi rice and mix in a chopping motion.
    @

  3. Break the eggs, add the sugar and salt, and stir. Fry it in the shape of crepe@and cut them into thin strips.
    @

  4. Place Takenoko-zushi on a large serving dish and the egg strips on it.

    Decorate with the sliced Takenoko and Ki-no-me on top.

@* How to boil the fresh bamboo shoots

  1. Remove the outer layers and cut in halfD    

  2. Boil the shoots with 2 dried red chili peppers in water saved from washing rice for 40`50 minutes.
