(Saury flavored with
sweet soy sauce)
Sanma(saury) is a sword-shaped fish. In fall it is succulent
and tastes good. Speaking of “Kabayaki”,Unagi(eel)is the most well-known,
Sanma is also very delicious.
Sanma 4, 2tbsp. of potato starch, a dash of Kona-sansho(powdered
Japanese pepper), salt, salad oil
(For sauce): 1/2 cup of Sake, 3 tbsp. of soy sauce, 2 tbsp. of
Mirin(sweet Sake), 1 tbsp. of sugar
(For garnish): 4 leaves of cabbage, 1 cucumber
Clean Sanma and cut into fillets and then two lengthwise halves.
Sprinkle Sanma fillets with a pinch of salt. Cover both sides slightly
with potato starch and brown in pan.
