`Sanma-no-Kabayaki`

(Saury flavored with sweet soy sauce)

Sanma(saury) is a sword-shaped fish. In fall it is succulent and@fat, and tastes good. Speaking of gKabayakih,Unagi(eel)is the most well-known, but Sanma is also very delicious.

y Ingredientsi4 servingsjz

  1. Sanma 4, 2tbsp. of potato starch, a dash of Kona-sansho(powdered Japanese pepper), salt, salad oil

  2. (For sauce):  1/2 cup of Sake, 3 tbsp. of soy sauce, 2 tbsp. of Mirin(sweet Sake),    1 tbsp. of sugar

  3. (For garnish):  4 leaves of cabbage, 1 cucumber

  1. Clean Sanma and cut into fillets and then two lengthwise halves.

  2. Sprinkle Sanma fillets with a pinch of salt. Cover both sides slightly with potato starch and brown in pan.
    Mix the ingredients of B and add it and simmer until most of liquid has been absorbed.

  3. Cut the cabbage and cucumber into fine strips, and mix.

  4. Place the vegetable of (3) on plate and arrange the Kabayaki neatly.
