`Kabocha-no-Soboroankake`
 (Simmered Pumpkin with Minced Chicken Sauce)

Pumpkin is a popular summer vegetable in Japan.

It is rich in Vitamin C, E, carotene and@vegetable fiber.

Pumpkin simmered with soy sauce and sugar is a typical Japanesecuisine. Adding chicken or meat makes it a delicious main dish. 

Ingredients (4 servings)

  1. 600g of pumpkin, 2 cups of water, 2 tsp. of Dashi-no-moto (Japanese powdered stock), 3 tbsp. of sugar, 3 tbsp. of soy sauce, 2tbsp. of Mirin, salad oil

  2. 150g of minced chicken, 1.5 tbsp. each of sugar, Sake and soy sauce, 1.5 tbsp of cornstarch, 1/2 cup of water, salad oil

Directions

  1. Remove the pumpkin seeds and stringy pulp. Cut it into 4cm squares and peel the skin at random.

  2. Heat oil in pan and put in the pumpkin. Fry slightly, and add the water and the seasonings of (A). Simmer until the pumpkin becomes tender.

  3. Heat oil in another pan. Fry the chicken and season with sugar, Sake and soy sauce. Add the cornstarch mixed with water to thicken.

  4. Place the cooked pumpkin in bowl and pour the chicken sauce on top.
