Chicken Loaf with Miso flavor)〜
Matsukaze is similar to a Japanese hamburger steak made
of minced chicken. It is often prepared for the New Year and also suitable
dish for parties.
A: 400g of minced (or ground) chicken, 1 egg, 2 tbsp
of potato or corn starch,1 tsp. of ginger juice
B: 80g of Aka-miso(dark colored
Miso), 4 tbs. of sugar, 2 tbsp. of Mirin, 2
tbsp. of Sake
C: 1 tbsp. of salad oil, 2 tbsp. of toasted white
Put the ingredients of B into a small pan and
cook low heat stirring constantly until
they become smooth. Remove from heat and cool.
Mix the ingredients of A and cooked Miso of (1) in a
mixing bowl until well combined.
Heat the oil in a frying pan and pat the chicken
mixture evenly to cover the bottom.
Stick the surface with a fork. Cook over medium heat
until the underside gets brown.
Turn over to cook the other side with a little lower
