`Miso-matsukaze(Sesame Chicken Loaf with Miso flavor)`

Matsukaze is similar to a Japanese hamburger steak made of minced chicken. It is often prepared for the New Year and also suitable dish for parties.

yIngredients (4 servings)z

  1. A: 400g of minced (or ground) chicken, 1 egg,  2 tbsp of potato or corn starch,1 tsp. of ginger juice

  2. B: 80g of Aka-miso(dark colored Miso), 4 tbs. of sugar, 2 tbsp. of Mirin,@2 tbsp. of Sake

  3. C: 1 tbsp. of salad oil, 2 tbsp. of toasted white sesame seeds

  1.  Put the ingredients of B into a small pan and cook low heat stirring constantly until

    they become smooth. Remove from heat and cool.

  2. Mix the ingredients of A and cooked Miso of (1) in a mixing bowl until well combined.

  3. Heat the oil in a frying pan and pat the chicken mixture evenly to cover the bottom.

    Stick the surface with a fork. Cook over medium heat until the underside gets brown.

    Turn over to cook the other side with a little lower medium heat.

  4. Transfer to a chopping board and sprinkle with the sesame seeds.

    Slice into eight wedge pieces and serve.
