gWhatfs the difference between Momen-Dofu and Kinugoshi-Dofu?h

Tofu is made by solidifying Tonyu with Nigari. The production process makes different types of Tofu.

  1. HOW TO MAKE

    Momen-Dofu

    Crumble solidified Tonyu and take the clear part off the top.

    Put the crumbled Tonyu in a wooden box with one large cotton cloth spread over the bottom and cover the top with the cloth and press it down.

    Kinugoshi-Dofu

    Solidify Tonyu with Nigari and put it directly into a wooden box without crumbling.

    Silk cloth is not used in the wooden box. This process makes Tofu smooth and soft with a silk feeling.

    Thatfs why the Tofu is called Kinugoshi.

  2. HOW TO COOK

    Momen-Dofu is used for Aburage(fried Tofu), Yu-Dofu(boiled in hot water), Yaki-Dofu(grilled Tofu).Yaki-Dofu is often used as an ingredient of Sukiyaki.

    Kinugoshi-Dofu is eaten as it is(Hiya-yakko) or used in soup.

    But which to use depends on the taste of the person.
