In summer when people lose appetite, vinegared dishes are often served at home because vinegar sharpens appetite. This dish can be eaten without removing the bones of the fish, for vinegar also makes the bones soft.

8 horse mackerel ( 10cm long ), 5 tbsps. potato starch, 600g salad oil, 1 long onion

For marinade

100ml rice vinegar, 100ml water, 3 tbsps. each of Sake, Soy sauce, and Mirin ( sweet Sake ), 2 dried red peppers

  1. Skim off scalybone (Hard scales at rear of fish) on the lateral line of the fish and wash them.@ Dry them with paper towel and coat with the starch.

  2. Mix the ingredients for marinade except red peppers and bring to the boil.  Remove seeds of the red peppers, chop finely and add to the boiled marinade.

  3. Heat the oil to 170 Ž and slide the coated fish into the oil.  Fry them until golden brown.

  4. Marinate the fried fish immediately while hot.

  5. Cut the long onion into very thin strips and place them on the marinated fish.

  6. Leave them for 1-2 hours before eating.
