Fukuroni - Stuffed thin deep-fried Tofu -
This is a kind of Tofu cuisine. Bags made of thin deep-fried Tofu with various kinds of ingredients are simmered in cooking broth.
Ingredients ( 4 servings )
4 Aburage (thin deep-fried Tofu), 30 g of each carrot and Gobo( burdock), 2 Nama-shiitake ( fresh Chinese mushrooms ), 100g of Shirataki(noodles made of Konnyaku ),100 g of minced chicken,1.5 m of Kanpyo ( dried gourd shaving )
For cooking broth
1/2 tsp. of salt, 1 tbsp. of each soy sauce and Sake, 2 tbsps. of water
3 tsps. of Dashi-no-moto(Japanese powdered stock ), 500 ml of water, 3 tbsps. of sugar, 2 tbsps. of soy sauce
Cut Aburage in half and then open from the end to make a bag. Pour boiling water over the Aburage to remove too much oil.
Immerse Kanpyo in water and cut into 8 pieces.
Put Shirataki into boiling water and bring to the boil for a few minutes. Drain and cut into about 5 cm lengths.
Cut carrot, Gobo and Shirataki into short fine strips.
Boil the seasonings of No.(2)- A in a pan and for a few minutes simmer all the ingredients of No.(1) except Aburage and Kanpyo.
Stuff the bags with the cooked ingredients and tie the end of each bag with Kanpyo.
Put the seasonings of No.(2)-B and water in a pan and bring to the boil.
Then place the stuffed Aburage in it and simmer until flavor is well steeped at medium heat( about 20 minutes).
