Japanese Cooking

Omu-raisu(Omelet with rice)

 

Though Omu-raise seems to be a western dish, it was originally cooked by Japanese, adapted

to Japanese taste. It consists of rice mixed with chicken, seafood and vegetables.

The rice is flavored with tomato ketchup or puree and wrapped in a thin omelet

This is one of children’s favorite dishes.

Ingredients(4 servings)

A: 3 cups rice, 150g chicken breast, salt, pepper, 1 onion, 3 fresh shiitake mushrooms

   1/2 cup boiled green-peas (or canned green-peas), 3 cups water, 1 tbsp. butter

B: 5 tbsp. tomato ketchup, 2 tbsp. Sake, 1 cube bouillon

C: 8 eggs, 6 tbsp. milk, salad oil, salt (optional), tomato ketchup

Directions

[] To make chicken rice(Japanese style chicken pilaf)

     Wash rice and drain. Cut the chicken, season with salt and pepper, and mince the onion

and the mushrooms.

     Melt the butter in a frying pan, and fry the chicken, the onion, and the mushroomsAdd the rice and fry them further.

     Put , the seasoning of B and water into a rice-cooker, and cook. When it is cooked,

add the green-peas and mix well. Divide the rice into 4 portions.

[]         To make omelet

Beat the 2 eggs, 1.5 tbsp milk and the salt. Heat the oil in a frying pan, put the beaten the egg and make a round thin omelet for each portion.

[] Place the omelet in a mold (or deep bowl), fill it with chicken rice. Turn the contents out onto a plate and form into an oval shape. Put tomato ketchup on the Omu-raisu.
